Zone of production: locality Fontane, Vittoria, Southeastern Sicily.
Grapes: 45% Cabernet, 45% Merlot, 10% Nero d'Avola.
Altimetry: 240 meters a.s.l.
Tipology of the soil: red soil medium consistency, of limestone-silicaceous nature, interwoven with compact layers and fresh clay and calcareous tufa;;
Training system: spur cordon 50 cm tall.
System of breeding: little tree and spurred cord with the fruits at cm. 50 above the ground.
Average age of the lives in production: 16 years.
Yield for hectare in grape: 40 ql.
Age of grape harvest: 18 September.
Fermentation equipment: concret tanks with electronic control of
temperature.
Temperature of fermentation: 30°.
Duration of maceration and alcolic fermentation: 12 months and 6 months in bottle.
Wine-making participations: only manual pumping over.
Stalks for the aging: wood for the Black one of Avola; steel for the Frappato di Vittoria.
No filtraton before bottling
Pithos like all our products, is a wine absolutely lacking in external substances, only 1 g/hl of SO2 before bottling, which has been made without filtration.
