Production zone and comune: area of Bastonaca, Vittoria (RG) South-East Sicily.
Grape varieties: Frappato 70%, Nero d'Avola 30%. Vineyards facing: South-East.
Altitude: 250 metres.
Soil type: medium consistency; formed of subalpine sands of Pliocene origin, of limestone-silicaceous nature, interwoven with compact strata of fresh clay and calcareous tufa.
Training system: spurred cordon with the fruit cane 70 cm. high.
Planting density: 5000 vines/hectare.
Average age of vines in production: 6 years.
Yield: 50 ql. Harvest period: end september.
Fermentation equipment: concret tanks with electronic control of temperature.
Fermentation temperature: 30°-33°.
Ageing period: 12 months.
Vastunaca, depending from the alcoholic level of the vintage, will become Cerasuolo of Vittoria DOC or Red wine of Vittoria DOC. |
