For over 3000 years, the Earth has had grape vines. This is an extraordinary gift that we have been given and that we have received with humility and work with in our own way. We are always looking to work as artists in terms of our concept of a wine. This has enabled us to undertake a very difficult path but one that we are fully satisfied with and that we intend to pursue wholeheartedly. For the past 30 years, we have been creating our history and putting it into every glass of our wine, our story, the story of our ancestral lands.

Harvest period: first days of September.
Fermentation: direct press, followed by spontaneous fermentation in terracotta amphorae.
Aging: concrete thanks.
Mise en bouteille: no addition of sugar and yeast but just fresh must from the following vintage.
Prise de Mousse: 20 months on yeast.
Expédition: dosage zéro. -
Pithos Bianco DOC
Area of production: Fontane, Vittoria (RG), South-East of Sicily.
Grape variety: Grecanico 100%.
Agriculture: Organic.
Altitude: 230 Meters a.s.l.
Soil: red soil, medium consistency; formed of sub-apennine sands of Pliocene origin, of limestone-siliceous nature, interwoven with compact layers of fresh clay and siliceous sand.
Training system: Guyot.
Planting density: 5.000 vines/hectare.
Average age of vines in production: 12 years.
Harvest period: September.
Fermentation: spontaneous in terracotta amphorae, on the skins with indigenous yeasts.
Aging: amphora and bottle. -

Grapes varieties: Grillo 50%, Insolia 50%.
